The olives come exclusively from our olive groves, hand-harvested from the end of October to November. The milling is carried out within a few hours of harvesting with a cold extraction system.

ORGANOLEPTIC CHARACTERISTICS
Clear, golden color with green reflections. Fruity, fragrant and harmonious aroma with hints of tomato, artichoke and sage. Delicate flavor with a spicy and bitter finish note.

Excellent with vegetable and legume soups, but also with baked in salt fish such as snapper or grouper.
